To filter or Not To Filter…
Like every year, at the start of the olive oil campaign, there is once again discussion of an issue that ignites spirits and sees two different opposing factions take sides, almost as passionate as football fans: oil filtration.
We have always clashed on this subject without arriving at an unequivocal conclusion also because generally we do not address the problem from a technical point of view but we limit ourselves to affirming our convictions without bothering to support them with scientific evidence.
And so the world of oil production and consumption is divided into those who consider crude oil as the best possible product, the only genuine product, supporting this thesis by arguing that in the past it has always been done this way and that avoiding submitting the oil in a further transformation phase is preserved richer in aromas and flavors and, on the other hand, there is that claims that filtration is a necessary process aimed at making the oil purer and of higher quality.
Without going into technicalities, it is appropriate to clarify that both positions are wrong and the question requires a brief study to give a definitive answer to those who still have this doubt today.
First of all it is necessary to understand what the real difference is between a crude oil and a filtered oil.
What distinguishes the two products is a variable quantity of vegetation water and suspended organic substances present in the raw oil and absent in the filtered one. The quantity of these substances varies according to how well the mill has worked and specifically how efficient and effective the extraction process (separation between solids and liquids) and separation (separation between liquids and liquids) has been.
Water, as we know, is an excellent bacterial culture medium and that of vegetation is even more so given the quantity of substances useful for nourishing bacteria and allowing for their rapid proliferation.
Especially in years like the current one, in which there was a large infestation by Bactrocera oleae or olive fly, the bacterial load present in the vegetation waters reaches levels such as to quickly determine important degradation processes to the oil.
The bacteria present in the water, facilitated by the presence of enzymes and organic substances on which they feed, multiply and activate natural processes that damage the oil both from a chemical point of view (causing an increase in the value of acidity, alkyl and of the parameters that measure oxidation), both from an organoleptic point of view (determining in principle a transformation and a drop in fruity values and rapidly leading to the onset of defects that were originally absent such as brine, vegetable water and the sludge).
This degradation process can be more or less rapid depending on the bacterial load present in the vegetation waters which depends not only on the state of health of the olives, but also on the general state of hygiene of the mill, on the times and methods of storage of the olives before milling, the quantity of vegetation water present, the processing temperatures and the methods and temperatures for storing the oil.
Unfortunately, natural settling is not sufficient to prevent the degradation process connected to the bacterial proliferation mentioned above and the only tool capable of preventing these damages is a filtration as rapid and accurate as possible which eliminates the water and everything contained in it.
Filtration is therefore not a process capable of improving the quality of the product but must be seen as a tool capable of preventing its degradation and extending its shelf life by eliminating all the elements potentially capable of damaging it.
Obviously, filtration is a phase of the process which, like the others, if carried out inappropriately, can in turn damage the product. It is therefore necessary to carefully choose the type of filtration to be carried out, avoiding the one that lets the oil pass through a layer of cotton by gravity and instead opting for a pressure filtration system through filtering elements with diatomaceous earth or cellulose panels, having the care to choose the right granulometry and remove all traces of water and other impurities. The choice of the pump is also very important which, if possible, must delicately move the oil (single screw pump to be preferred over the impeller pump) and must be equipped with an inverter in such a way as to regulate the flow rate adapting it to the size of the filter without ever stress” the oil. In the light of what has been illustrated above, it is clear that not filtering the oil exposes it to the risk of rapid degradation, while filtering it does not make it better but only serves to prevent the vegetation waters present and what they contain from rapidly damaging the product. and shorten its shelf life, thus nullifying the work of a year in the field and a few hours in the mill.
